Jordan's Collection of Recipes - Yorkshire Pudding

Ingredients

Equal parts by volume of egg, milk and flour.
For example: Crack 4 eggs into a measure cup and note the volume.
a pinch of salt.
high smoke point oil.

Directions

Step 1
Mix those eggs with the same volume of flour, and then mix in the same again volume of milk.
Step 2 ( Optional but recomended)
This batter (any Yorkshire pudding batter for that matter) works best if let rest in the fridge for 12 - 24 hours.
Step 3
Add a pinch of salt.
Step 4
Pre-heat your oven and (dry) pan to 475'F.
Step 5
Once pan is heated, add a high smoke point oil to each cup.
Step 6
Now heat the pan and the oil again, until the oil is just about smoking.
Step 7
Quickly fill each cup 1/2 to 3/4 of the way and place back in the oven.
Step 8
Bake at 475'F until the Yorkshires have stopped growing.
Step 9
Turn the oven down to 350'F and bake 15 - 20 minutes more.
